Kanda poha recipe maharastrian style - it a popular breakfast snack made up of beaten rice, caramelised onion and peanuts.

Ingredients
  • 2 cups Poha thick variety
  • 2 tablespoon oil
  • 2 tablespoon peanuts
  • 1 teaspoon mustard seeds
  • 8-10 curry leaves
  • 1 teaspoon green chillies finely chopped
  • 2 medium sized onion finely chopped
  • Salt – to taste
  • 1/8 teaspoon turmeric powder
  • 1/2 teaspoon sugar
  • 1 tablespoon lemon juice
Instructions
  1. Rinse poha with water about 2-3 times to clean it properly. Soak in clean water for 7-8 minutes.
  2. Strain the water completely and keep aside.
  3. Note - do not rinse and soak poha for longer time other wise poha will become soggy.
  4. Meanwhile heat a pan on medium heat and oil.
  5. Once oil is medium hot, add the peanuts and cook till the time they start to change color.
  6. Remove the peanuts in a bowl.
  7. In the remaining oil, add mustard seeds, let them splutter.
  8. Add in curry leaves, green chillies and onion.
  9. Cook onions for 1-2 minutes until translucent and salt.
  10. Add turmeric powder and sauté.
  11. Then add sugar and washed poha.
  12. Mix the poha well with the cooked onion mixture.
  13. Finally sprinkle lemon juice and saute for few seconds.
  14. Switch off the flame. Kanda poha is ready to serve with cup of ginger tea.
Recipe Notes

You can always spice it up or down depending on your taste. • Another variation can be done is add potato after adding onion. Cook until become tender but not mushy. This will become Batata poha (Maharastrian style).
