Rinse poha with water about 2-3 times to clean it properly. Soak in clean water for 7-8 minutes.

Strain the water completely and keep aside.

Note - do not rinse and soak poha for longer time other wise poha will become soggy.

Meanwhile heat a pan on medium heat and oil.

Once oil is medium hot, add the peanuts and cook till the time they start to change color.

Remove the peanuts in a bowl.

In the remaining oil, add mustard seeds, let them splutter.

Add in curry leaves, green chillies and onion.

Cook onions for 1-2 minutes until translucent and salt.

Add turmeric powder and sauté.

Then add sugar and washed poha.

Mix the poha well with the cooked onion mixture.

Finally sprinkle lemon juice and saute for few seconds.

Switch off the flame. Kanda poha is ready to serve with cup of ginger tea.
