For stuffing , In a mixing bowl add boiled diced potato, boiled yellow peas, chopped onion, coriander leaves and chat masala. Mix everything and keep aside.

For spicy water, Add coriander leaves, mint leaves, ginger, green chilli, jaggery and water in a grinder. Grind till it becomes smooth paste. Then add tamarind juice , black salt , pani puri masala. Pulse it again for 20 seconds.

In a bowl add ice cold water and the green mixture prepared above. Add boondi and mix it. Green spicy water is ready.

Assemble the pani puri. Take a puri and crack the top of it. Fill the puri with stuffing.

Add green spicy water.

Add sweet tamarind chutney.
