Eggless pancakes are super soft, fluffy and made without using eggs. They taste so delicious that you won't able to guess that they are egg free.

Ingredients
  • 1 cup all purpose flour
  • 1 tablespoon baking powder
  • A small pinch of salt
  • cup whole milk
  • 1 tablespoon honey
  • 1 tablespoon olive oil/ organic coconut oil
  • 1/2 teaspoon vanilla extract
Instructions
  1. In a large mixing bowl sift dry ingredients; all purpose flour, baking powder, baking soda, salt and whisk it together.
  2. In another bowl add wet ingredients milk, honey, oil and vanilla essence. Mix it.
  3. Then add wet mixture to dry mixture, stir it to combine to form a lumpy texture. Don't worry about lumps.
  4. Note - DO NOT over mix at this point . Over mixing the batter will result in tough, rubbery and flat pancakes.
  5. Heat a skillet to medium - high. Use a spray oil to smear oil on the surface. Then pour one ladleful or about a 1/4 cup mixture from step3, on hot skillet.
  6. Pancake starts to bubble. Once bubbles settle down in about a minute flip it to another side. Cook for another 1 minute.
  7. Repeat with all the mixture left. Eggless pancakes are ready to serve.
  8. Top the pancakes with berries, figs and honey. You can also serve them with fresh cream or greek yogurt and any fruits you like.
