Rhubarb Shrub recipe

Rhubarb shrub is such a refreshing and delicious non alcoholic drink. Adding shrub to sparkling water or cocktail turns it into an exotic flavourful drinks.

Servings: 2
  • 2 cups rhubarb diced into very small 1/4 inch pieces
  • 1 cup sugar
  • 1 cup vinegar white or apple cider
For sparkling rhubarb rose shrub
  • 1 ounce rhubarb shrub
  • 4 ounce sparkling water or wine or Champagne
  • 2 drops rose essence or 1 tablespoon rose water
  • A few rose buds and thyme for decoration
  1. Instructions
  2. In a mixing bowl, add diced rhubarb and granulated sugar. Mix it thoroughly.
  3. Cover the bowl with cling wrap and place in the fridge for about 5 days, shaking occasionally help to dissolve sugar.
  4. Take another bowl and place a strainer over it.
  5. Pour the liquid and strain the rhubarb mixture by pressing the solids against the strainer.
  6. Or you can blend it before straining, squeezing all flavours and goodness out of it.
  7. Mix the rhubarb syrup with vinegar and pour into an airtight jar and put it in fridge.
  8. When ready to use, shake it once and pour it into beautiful drink.
To make Sparkling rhubarb shrub
  1. Prepare glasses by rimming with dried raspberries or sugar.
  2. In a cocktail shaker, add 1 part of this rhubarb shrub and 4 parts of sparkling water or wine.
  3. Add 2 drops of rose essence or 1 tablespoon rose-water.
  4. Shake it to mix it thoroughly.
  5. Pour down to glasses.
  6. To garnish throw some rose buds and thyme
  7. Serve it chilled.
