Carrot Laddu (Carrot Coconut Truffles)

Carrot laddu is a very healthy and delicious sweet dish .Its a quick and easy recipe which you can make for coming Karwa Chauth or Diwali festival. I have made this recipe for Karwa Chauth. As you know most of Indian desserts contains a huge amount of calories so to give cut on calories at the same time satisfying your cravings for sweets, I evolved this carrot laddu recipe . It is my own version and believe me, once you try it you cannot resist from having more .I enjoyed it a lot and if you also have a sweet tooth like mine, give it a try. Let’s see the recipe.
Carrot Laddu

Prep time: 10 min | Cooking time: 15 mins |
Type :Dessert| Serves 3-4

INGREDIENTS

2 Cups Carrot chopped finely
1 1⁄2 Cups Coconut dessicated
1 Cup Condensed milk
Few Almond slices
Few Drop Rose water
2 Pinchs Cardamom powder
3 Tbsp Ghee

Method
Chop the carrots very finely, preferably in a food processor or a hand grater.carrots

dessicated coconutSaute dessicated coconut in a wok for 5 minutes till it releases aroma .

chopped carrotsNow add the chopped carrots to the wok and saute on medium flame for about 10 minutes or until it gets cooked and tender.

nuts in carrotsNow add some nuts of your choice, I have used sliced almonds.

condensed milkAdd half of the condensed milk, mix well until all the condensed milk is absorbed. Add rose water, cardamom powder and rest of condensed milk and saute till the condensed milk is absorbed .You will observe that mixture is turning sticky enough to roll small balls out of it.carrots Switch off the flame. Cool the mixture slightly.

Grease your palms with little ghee & roll out your laddus of a size you want to make.

Carrot Laddu

Sprinkle some chopped nuts and coconut on top to garnish.
