Soya Bean Potato Curry Recipe

Hello everyone, I hope you all are doing well. After a long time break again, I am back to blogging. Here come today’s veg recipe-Soya Bean Potato Curry.  Soybeans are protein rich and must eat legume for everyone due to its high nutritional values. I am a great fan of potato so made this curry with potato, It tasted awesome when we had it with phulkas last weekend. If you don’t want to add potato, skip it or add soy-chunks instead of potato. Try at least once and see how your kids and family loves to have it. Let’s see the recipe.

Prep time: 10 min (Excluding soaking time)| Cooking time: 20 mins
Type: Side Dish| Serves: 5

Ingredients:

1 cup soya beans (Soaked in warm water for 8-10 hrs or overnight)
2 potatoes medium (cut into cubes.)
2 green chilly chopped finely
1 medium onion chopped finely
2 medium tomatoes chopped finely
1 ½ tsp ginger garlic paste
1 tbsp coriander powder
½ tbsp cumin powder
1 ½ tsp garam masala
½ tsp red chilli powder (adjust as per taste)
½ tsp turmeric powder
1 tbsp oil
1 tsp cumin seeds
salt as per taste
few cilantro leaves to garnish

Step by step Soya bean curry

Wash soya beans and add some water in pressure cooker. Cook upto 7 to 8 whistles. They should be soft but not mushy.

In a wok heat oil, add cumin seeds, once they start spluttering, add green chilli. Add onion, fry till they turn pink in colour. Add ginger garlic paste and fry for few more minutes until the raw smell is gone. Add coriander, cumin powder,turmeric powder, garam masala, red chilli powderand salt, cook for a minute.

Add tomatoes and add little  water left from cooked soya beans and cook on medium low flame until a nice consistency forms.

Add the potatoes and cook for another couple of mins.
Now add cooked soya beans to the gravy, let it simmer on low gas for 10 minutes.

Soya bean curry

Garnish with cilantro and serve hot with chapatis or rice.
