Apple Rabri/Kheer – Apple dessert with Condensed Milk

Apple Rabdi is simply awesome dessert which is healthy yet delicious. Traditionally rabdi  is made up by drying up milk in a wok by heating for several hours. It is very time taking procedure. To lessen the effort or I can say effortless, it can be made very easily with condensed milk and several other ingredients. To make it rich in taste I have used evaporated dried milk (Mava/Khoya) which can be easily made in microwave in 5 min. It can be eaten during Hindu fasting days like Navratri. It is filling and delicious. Now let’s go through the recipe.

Prep time: 10 mins | Cooking time: 20 mins |
Type: Dessert | Serves: 4

Ingredients
4 medium sized Apples
3 tablespoon Condensed milk
3 tablespoon Sugar
1 cup full fat Milk
2 tablespoon Butter/Ghee
3 tablespoon Dried evaporated milk(Mava /Khoya)(optional)
3-4 crushed Cardamoms
Some Almonds and Pistachios for garnish

Method

Apple Rabdi

Peel and grate apples. Place a heavy bottom wok or pan over medium heat. Melt 2  tablespoon of butter or ghee and put shredded apples in wok. Saute until apples gets cooked. It will take around 5-7 min.

Add sugar and keep stirring the mixture. To give rabdi rich texture I have used condensed milk and mava.

After adding sugar see the texture of cooked apples, they become mushy and little bit transparent. It is important to cook the apples before adding milk else milk will curdle and you may end up in mess. So be careful at this point. Now add 3 tablespoon of condensed milk and 1 cup of milk. Stir it continuously.

Add mawa/khoya( if using it). Add crushed cardamom. Cook for another 5 min till the mixture gets a very thick consistency. Turn off the heat. Add chopped almonds and pistachios. Apple rabdi or kheer is ready to serve. Pour in a serving bowl and serve hot or cold.Apple Rabri recipe

Tips-

  • If khoya is not available, you can replace it with dried milk powder.
  • If condensed milk is not available, you may use full fat milk but you have to burn it a lot to get it thicken.
  • Vanilla essence or powder can be added to enhance the flavour.
