How to make coconut fuge

 

Coconut peda are simply delicious fudge recipe made from coconut and milk powder. I am very excited about this recipe because It was an experiment which came out successful. On weekend my tastebuds were yearning for something sweet so I decided to prepare milk peda but unfortunately I had very less dried milk powder,one of the main ingredients for milk peda, left in kitchen so to compensate it I added dessicated coconut which was available in my pantry. This is how this coconut peda recipe developed in my kitchen 😉

I really liked the texture of peda and coconut unsurprisingly enhanced the savour. In this recipe I have followed the same method as the Paneer peda which I had posted earlier. The only difference is addition of coconut instead of paneer.

These coconut peda can be made in microwave but I like to use gas stove because probability of failure gets reduced and you may have full control over the consistency of mixture. These coconut fudge (peda) are really delicious and can be made in less time as compared to traditional one. The only difference I found in both methods is that these (gas stove) peda taste best when you keep them for rest about 4- 5 hours.

You may also have them immediately there is really minor difference in taste. NOTE- This is my personal opinion.

Ingredients 

Desiccated coconut – 1 cup
Ghee or butter – 1 tbsp
Non fat milk powder – ¼ cup
Condensed Milk – ½ cup
Kewra essence or Rose water – ½ tsp
Cardamom powder -1 tsp
Pistachios – a few to garnish

Let’s prepare coconut peda recipe

Step 1. Place a sauce pan on medium flame and roast the desiccated coconut for 2 minutes. Once coconut starts releasing aroma take out the roasted coconut to a plate. Now in the same pan melt the ghee. Pour condensed milk and cook for a minute on medium low flame.

Step 2. Add milk powder, desiccated coconut, cardomom powder, kewra essence and stir for 30 seconds. Check the consistency of the mixture. It should be gluey. Do not cook for more time else peda will be hard and chewy. coconut peda consistency

Step 3. Switch off the flame immediately and transfer the mixture to a plate. Note– just avoid heat which can make mixture hard. Let the mixture cool off to become just lukewarm. Allow it to stand for 3 – 4 minutes.

Step 4. Now the mixture is ready to make a pedas out of it.
Grease a plate with ghee and your palms to shape the coconut peda. Garnish with pistachios when still warm.

Enjoy the delicious and divine coconut peda.
These pedas can be kept for few days at room temperature and about a month refrigerated. Make these pedas for pooja/festivals or simply enjoy them with a glass of chilled milk.coconut fudge recipe
