Jack Frost Cocktail Recipe – A festive eclectic combination of coconut, blue curacao and pineapple juice.

Ho Ho Ho, Merry Christmas my dear folks. Christmas is the biggest festival celebrated in UK. Christmas lights are up and air is breezy. Yes, it’s almost Christmas, just one more week to go . Now wherever I am visiting these days I get mesmerised looking at beautiful decoration all over the city.

Yesterday, at a social event, I got chance to make some new friends from different countries and cultures  . We spent very good time with each other. I was amazed to know about different ways people celebrate Christmas in other countries. One person from Ukraine told that in Ukraine Christmas is celebrated on 7th of Jan following Julian calendar. Then another friend who was spanish told us that similar to Christmas, they celebrate Epiphany when the ‘three wise men’ come. Epiphany celebrates when the Kings or Wise men brought gifts to the baby Jesus. I loved to hear about the stories about their festivals.

Ok now coming to this Jack Frost Cocktail Recipe. As this cocktail looks so festive and frosty, it is one of the best cocktail to serve on christmas eve.

Jack Frost Cocktail is a delightful combination of coconut cream, vodka and pineapple juice. It turns beautiful upon adding blue Curaçao and flaky coconut on rim. Blue Curaçao is a liqueur flavored with the dried peel of the Laraha citrus fruit, grown on the island of Curaçao. This cocktail is an excellent choice when it comes to presentation. Let’s see how to prepare it.

Jack Frost Cocktail Recipe - A festive eclectic combination of coconut, blue curacao and pineapple juice.

Ingredients
  • Light corn syrup  for rimming glasses
  • Shredded coconut for rimming glasses
  • 2 cups ice more or less depending on desired consistency
  • 1/2 cup pineapple juice
  • 1/4   cup blue curacao
  • 1/4 cup vodka or light rum I used rum
  • 1/4   cup cream of coconut
Instructions
  1. First prepare the glasses by rimming. In a plate, take out shredded coconut. Wet the rim of glass with corn syrup and dip the glass in coconut.
  2. In a blender, add ice, pineapple juice, blue curacao, vodka and cream of coconut. Blend until desired consistency is achieved (approx 2 minutes).
  3. Pour Jack Frost Cocktail into prepared glasses.
  4. Serve immediately
