Mixed vegetable Raita is very delicious and a great accompaniment to Biryani .Its cool, refreshing and there is no cooking involved.My biryani meal is incomplete without a raita…I made this mixed veg raita to go along with Veg Biryani and it was a great combination.
Roasted jeera/cumin powder -1/2 tsp
Chat masala – 2 pinch (optional)
Curd -1 1/2 cups (whisk it well)
Salt as required(Black salt is best in taste)
For the seasoning
coriander Leaves-Few strands
Green chillies – 1 finely chopped
Wash and peel the skin of cucumber.
Chop tomatoes (remove the seeds) capsicums and onions finely.
Chop cucumber into small pieces.
Take curd and mix all the vegetables.
Sprinkle roasted cumin powder and mix it .
Add salt required.
Garnish with finely chopped coriander leaves.
Yummy Vegetable Raita is ready for Biryani.
I served it with Veg Biryani But it goes really well with any type of Biryani,Pulao or Roti.TIP-Adds salt to the raita only just before serving. If you add salt any sooner, it will draw out the moisture from the vegetables and make your raita watery.
