Step by step mushroom masala recipe
Mushroom masala is a delicious curry prepared with button mushrooms simmered in onion and tomato based gravy. These days I have become very fond of mushroom recipes and preparing them a lot. I feel I am getting obsessed with mushrooms recipes. As I have written in my previous post kadai mushroom that mushrooms are really healthy and a very good food option for those who are vegetarians or vegans. In this mushroom curry recipe I have not used any dairy product so its perfect for vegans. I have used bay leaves to make it aromatic but if you like you can add more whole spices like cloves, black pepper and green cardamom. This mushroom curry goes well with rice and phulka.

Ingredients
250 grams button mushroom
2 tablespoon olive oil
½ tsp cumin seeds
2 bay leaf
Onion Paste from 2 medium sized onions
½ tsp ginger garlic paste
½ tsp turmeric powder
¼ tsp red chili powder
½ tsp coriander powder
¼ tsp garam masala
½ cup tomato puree
Salt to taste
Water as required
Lets prepare mushroom curry step by step
Step 1. Place a wok or pan on medium flame. Add oil. Once oil gets heat up, add cumin seeds and stir till they start splutter. Add bay leaves. Add onion paste and saute for 2 min on low flame. When onion paste starts changing its colour add ginger garlic paste. Saute until raw aroma evaporates. Add turmeric powder and saute for 30 seconds.
Step 2. Add coriander powder, garam masala and red chili powder. Saute the masala till it starts coming together. Add tomato puree and saute for 2 min again.
Step 3. Masala is cooked now, add chopped mushrooms. Mix them together and add salt to taste.
Step 4. Add half cup of water and put the lid on. Let it cook on medium low flame for 20- 25 minutes. Check the mushrooms after 20 min, they must be cooked until now.
Mushroom masala gravy is ready. You can serve it with rice or phulka/ chapati.
