Have you ever done dieting ? sorry I mean clean eating. I hate word dieting, I never diet. Just swap my food to high protein food. I cut back my sugar and use stevia as much as possible. I survive on 2 teaspoons of sugar each day which is consumed in my ginger tea. I can’t imagine to live without my morning and evening tea. And sometimes, during these days I get a huge urge to eat something really sweet which can be quite a struggle.
These quick desserts like this ( cookie in a mug ) can come out as life saving at that time to satisfy my craving as well as to make sure that i don’t gain too many calories because there is no left over. I make it and share it with my 3 year old son (if stevia is not used).
In this microwave vanilla cake recipe I have used combination of sugar and stevia to substitute sugar, you may ignore it and use sugar.
While making mug cakes, few things should be noted before trying.
- Don’t fill any mug more than half. This is the golden rule of mug cake baking. If you stick to that, you will avoid overflow.
- Microwave recipes for lesser time than its mentioned – Every one have different microwave timing so your timing may vary. Check the cake by carefully touching the top. It should be firm and springy, not at all doughy. If its not fully baked yet, put back in microwave.
- Use self-rising flour – I have found success using self rising flour. It is available easily in market. But if you don’t find it, make it at home. Combine 1 cup all-purpose flour + 1 1/2 teaspoons baking powder and 1/4 teaspoon fine salt.

- 1 tablespoon butter
- 2 tablespoons sugar or 1 tablespoon sugar + 1 generous pinch of stevia
- ¼ teaspoon vanilla extract
- 5-6 drops vinegar
- 4 tablespoons milk or dairy free milk
- 4 tablespoons self raising flour or all-purpose flour
- ½ teaspoon baking powder
- 1 tablespoon Funfetti sprinkles

In a microwavable glasses or jars, melt butter to liquid state.

Add in the sugar, vanilla extract, milk and vinegar, mix until just combined.

In the jar add flour, salt and baking powder. Stir to combine it together.

Microwave for roughly 1 minute 40 seconds or until firm to the touch (timing is based on my 900 Watts Microwave so your timing may vary).

Serve warm with frosting or ice cream and sprinkle funfetti on top. Enjoy!

Just tried it . I was skeptical about the results but it’s a great recipe and it has good texture. Used a 700w microwave for 2.15 minutes. Next time I will be adding a pinch of baking soda to my normal flour+baking powder mixture.
