Eggless almond flour cookies- These are eggless cookies, grain free, paleo cookies made up of almond flour, coconut and coconut oil.
These are one of the best healthy cookies I have ever made. These cookies are not only healthy but also so perfectly textured that you can’t stop at one. They are easy to make and requires no usage of machine for mixing. Just wired whisk can work. Also these cookies are not time taking and no refrigeration of cookie dough is required.
In this Eggless almond flour cookies, I have used only coconut oil and the texture came out really well. To sweeten these cookies I have used combination of brown sugar and organic stevia. If you don’t use stevia, replace it with castor sugar or any other sweetener that you prefer.
Last thing, I have used oats milk in recipe but you can replace it with any other milk like soy or cow milk.

Ingredients
2 tablespoons coconut oil
1 tablespoon brown sugar
1 teaspoon stevia
2 tablespoon oats milk
1 teaspoon vanilla extract
1/2 cup desiccated coconut
1 cup almond meal/flour
1 teaspoon baking powder
A pinch of salt
1/2 cup dark chocolate chips or chopped dark chocolate
For decoration
1 tablespoon chocolate
1 teaspoon oats milk
Step by step Eggless almond flour cookies
Step 1. Preheat oven to 170 degree celsius for at least 10 minutes.
In a mixing bowl add coconut oil, brown sugar, and stevia. Whisk for 2- 3 minutes to combine it.
Step 2. Add vanilla and milk. Whisk it again to combine.
Step 3. Add almond flour, coconut, salt and baking powder. Mix it.
Step 4. It will form a sticky soft dough.
Note – You can always add flour to adjust the texture of cookie dough.
Step 5. Chop the dark chocolate into small pieces or use chocolate chips.
Step 6. Add chopped chocolate chips. Mix it to combine.
Divide into 10 equal balls.
Step 7. Line a parchment paper in baking tray. Place the cookie dough balls 2 inch apart. Press them little to form disc shape.
Bake cookies for 8 – 10 minutes until edges becomes golden brown. Take them out and cool on a wire rack.
Step 8. When cookies cool down completely decorate them with melted chocolate.
To make melted chocolate, add chocolate and milk together in a microwave safe bowl. Microwave for 10 seconds and stir. Pop it again in microwave for 10 seconds and stir. Repeat until chocolate is melted completely. Take it in a piping bag and make decoration on each cookie. Let them dry and store them in an air tight container. They stay fresh up to a week. Enjoy.
