Mojito mocktail
Blueberry mojito mocktail is an exquisitely refreshing drink made with fresh blueberries, mint and lemon. Basically this mojito recipe is a cocktail but today I am presenting the non alcoholic version. So essentially a fantastic drink recipe for kids and teetotalers.
In this mojito drink, I have used fresh blueberries in three forms, first I have puree the blueberry as I love to see purple colour of my mojito. Then crushed few blueberries to bit consistency. And then used a few whole as garnish. I have also used whole mint leaves, as I don’t need this drink to be excessive minty so no need to crush it.
I have seen some mojito drink on internet and really fascinated by viewing the blue sugar on the rim of the glasses. But couldn’t find this coloured sugar in my area. However the taste remains same whether you use it or not. It makes drink look little more beautiful.
Blueberry mojito is a beautiful drink and can be a big hit if you prepare it for a baccha (kids) party. Let’s jump to the recipe.
Ingredients
Blueberries – 1 cup + few for garnishing
Fresh lime juice – ¼ cup
Sugar – ¼ cup or adjust to taste
Fresh mint leaves – 8-10 (few more for garnish)
Club soda – ½ cup or sparkling water
2 lemon slices for garnish Ice as needed
Let’s prepare blueberry mojito
Step 1. Add blueberries, sugar and lime juice to a blender and blend them into a fine puree.
Now crush the rest of blueberries with a muddler.
Step 2. If you want to decorate glasses, moisten the rim of glasses with the lemon and turn the glass upside down and dip it in sugar. Blue sugar is recommended, however you may use regular sugar or salt. This step is optional.
Step 3. Now in a pitcher (jug) or in individual glasses layer ice cubes, and add mint leaves. Then add prepared blueberries puree and whole blueberries.
Step 4. Top off the glass with club soda or sparkling water and mix gently. Taste the blueberry mojito and add sugar if needed more.
Step 5. Garnish with mint leaves. The tasty and refreshing blueberry mojito mocktail is ready to serve. Enjoy !!

This is a very interesting take on Virgin mojitos. Using different consistencies of blueberries gives the drink more body and depth. The clicks as usual are outstanding. Loved the mojita a lot and have bookmarked it.
