How to make shahi tukda with pistachios

 

 

Shahi tukda is one of the most richest desserts which can be easily prepared at home using bread. Today I am sharing its instant version. I make this quick dessert often at my home as it requires very less time. In Hyderabad India, Shahi tukda is also called ‘double ka meetha’, which has its roots to mughlai cuisine.

Traditionally shahi tukda is served with rabdi. In my instant version to make bread tukda recipe I have replaced rabdi with condensed milk. Another thing I would like to mention is that I have used shallow fry method to fry the bread, you may deep fry them in oil/ghee or you can even toast them in toaster without using any fattening.

The best way to make sahi tukda recipe which I found is to shallow fry the bread by brushing little amount of butter. If you are not running out of time you can also prepare rabdi which would definitely enhance the flavour. Let’s go through the recipe:-)

Ingredients

Bread –  4 slices
Ghee / butter – 1 tbsp
Sugar – ½  cup
Water – ¼ cup
Saffron – a few threads
Rose essence –  2 drops
Condensed milk – 1 ½ tbsp
Chopped pistachios – 2 tbsp

Let’s Prepare Instant Shahi Tukda

Step 1. First prepare sugar syrup, add sugar and water to saucepan. Place it over medium high flame.

Step 2. Add some saffron strands and let it come to a boil. Once it starts boiling turn the flame to lowest possible heat and let it simmer now for 4-5 minutes. Once sugar syrup get thickens, add rose essence and turn off the heat. Set it aside. If sugar syrup starts crystallizing you may add 2-3 drops of lemon juice to prevent it.

Step 3. Now place a skillet (tawa) on medium flame. Cut the bread slices diagonally and toast them by applying little ghee or butter. Now flip them to other side. Make sure that you toast them on low heat so that bread get evenly cooked.

Step 4. When bread slices turn to golden brown, slide them one by one into prepared sugar syrup . Let them dip  for about 1 minutes and take out and put them on a rack. This step will help to drain the excess of syrup.

Step 5. Now arrange the bread tukda in a serving plate and pour the condensed milk over the top. Garnish with sliced pistachios. Serve them immediately.

Tips

  • Once you have prepared shahi tukda, serve them immediately else they will turn soggy.
  • If you are preparing this recipe ahead, make sure that you refrigerate by covering with cling film.
