Domino's pizza dough recipe

I love Italian cuisine and the most favourite dish is pizza. Mostly I bake pizza at home as home-made pizza is best to have, if you are consuming it frequently, so that you can have better control over the fatty and saturated ingredients like cheese and oil. However sometimes when I am not in mood to bake it at home I order it from restaurant. Pizza from Dominos is one of my favourites. I wonder why the pizza from restaurants taste so delicious. Out of this curiosity  I have tried to bake pizza many times at home to try to get that Domino’s flavour. As a result of this trial and error I think I managed to prepare the pizza dough recipe which tastes very close to Dominos pizza dough.

As far as I have researched and come to know, Dominos and many other pizza manufacturer chains use delayed fermentation. Delayed fermentation is the method of making bread by mixing the dough and refrigerating it overnight or longer. I have not tried this method yet.

This copycat dominos pizza dough recipe produces a dough which is very good in texture. The texture is milky and chewy inside yet crusty and browny outside.

This recipe uses dry milk powder. Do you know why?
First dry milk aids in browning the crust because it contains sugar called lactose which caramelizes upon contact to heat. Second it produces soft and milky texture.

1. Healthy whole wheat thin crust pizza

Ingredients

*measurement for cup used, 1 cup = 250 ml

2 ½ Cups / 300 gms All Purpose Flour (Maida)
7 grams/1 packet / 2 ¼ teaspoon Instant Yeast
3 teaspoon brown Sugar or 2 teaspoon honey
3/4 cup / 177 ml Warm Water
5 tsp / 15 gms Non fat Milk Powder
2 tablespoons / 30 ml extra virgin olive Oil
1 tsp Salt
¼ cup cornmeal or semolina flour for tossing

Step by step on domino’s pizza dough recipe

Step 1. Mixing the ingredients – In a large mixing bowl take flour, milk powder, brown sugar, olive oil and salt. Mix it thoroughly with a slotted spatula.

Step 2. Hydrate the flour – Warm the water and divide into two equal parts. Add one part of warm water to flour. Mix with spatula and let it rest.
Take other half part of warm water add instant yeast and mix. Let it rest for 10 minutes or till the mixture gets froth. (if it does not, then throw and restart.) After 10 minutes add yeast mixture to the flour mixture.

Step 3. Kneading the dough – Knead the dough. I have tried preparing dough with hands as well as machine. I found that machine makes dough smoother and softer than manual kneading. However, many of us doesn’t own a stand mixer so I have chosen not to use my stand mixer in this recipe.

Step 4. Knead the dough for at least 15 minutes to form gluten in dough. In the end when dough is almost done, drizzle some olive oil on palm and give additional 5 minute knead to smooth it out. Smear some oil all over the surface of dough and cover with cling film.

Step 5. Fermentation – Rest dough for 90 minutes or more at warm place. I heated my oven for 30 seconds on highest temperature and turned it off, then I placed dough at top shelf in my oven.

Step 6. Bench proofing the dough – After step5 , punch down the dough and knead it again for about 2- 3 minutes. Then divide it into 3 equal parts (or 2 equal parts) depending upon the size of pizza you want to prepare.

Cover with cling film and leave it for another 30 minutes for rise. No need to put dough at warm place this time.

After 3o minutes you can see that dough has risen as shown in below picture.

Step 7. Take it out and knead again. Use some dry all purpose flour if you need, in case it is too sticky to handle. Spread some cornmeal on worktop and place one piece of dough and shape it for preparing pizza.

    Dear Rachana,

    First of all my thanks for sharing this recipe! I cannot wait to try it out.

    I would like to ask if I should use 1 cup water or 170 ml. water as a cup is 235 ml.
    (so devided 1/2 cup~117,5ml or 85ml)
