How to make brownies without eggs
Eggless chocolate brownie is delicious, dense and gooey. This brownie is really healthy…What healthy ??? Yes you have read healthy. I have tried this eggless chocolate brownie several time to make it perfect with high protein ingredients and this version brownies is a perfect sweet treats for fitness minded people. This recipe can be called perfect healthy brownie recipe.
In this protein brownie, the ingredients that I have used are Oats , wheat flour, Greek yoghurt, Cottage cheese, Banana, Brown Sugar, Protein powder, Cocoa powder and Skimmed milk. Most of these ingredients have high protein content so these chocolate brownies are rich in protein, egg free and very low fat . Yes these chocolate brownies cooked with no oil and no butter.
Brownies taste good when they have right gooey texture in them. So to moisten it I have used mashed banana. Any fruit puree will work. To increase the protein quantity I have used Greek yoghurt, cottage cheese and protein powder. I have used vanilla flavour of protein powder as only this was available in my pantry but chocolate flavour of protein powder is recommended as it will add to taste of brownie. These days I am pretty much obsessed with trying to eat high protein healthy foods because they help with muscles recovery, and also replenish the depleted energy stores after a good work out.
If you do not wish to use protein powder you may replace it with coconut flour. In this recipe I have used cottage cheese please do not confuse with paneer. Cottage cheese is a fresh cheese curd product with a mild flavor. It is drained, but not pressed, so some whey remains and the individual curds remain loose.

Ingredients
Wheat flour – ¼ cup
Rolled oats – ¼ cup
Brown sugar – ¾ Cup
Unsweetened cocoa powder – ¼ cup
Chocolate protein powder – ½ cup
Baking powder – 1 tsp
Baking soda – A small pinch
Pure vanilla extract – 1 tsp
Greek yoghurt – ½ cup + 1 tbsp.
Mashed banana – ½ cup
Cottage cheese – ¼ cup
Skimmed milk – ¼ cup
For Frosting
Dark Chocolate – 3 tbsp
Milk – 2 teaspoons
Step by step how to make brownies without eggs
Step 1. Preheat oven to 350 degrees F (180 degree Celsius). Grease baking pan with the butter. Place 2tbls flour in the pan and tap it around to coat pan and throw excess flour away. Baking pan is ready to bake. Now take a mixing bowl and add the wheat flour.
Step 2. Add vanilla protein powder, oats and a teaspoon of baking powder.
Step 3. In the same mixing bowl sift the unsweetened cocoa powder. Now take another bowl and let’s mix the wet ingredients together. Mash the banana with the help of a fork. Then add Greek yoghurt.
Step 4. Now add the cottage cheese and brown sugar and stir to combine it.
Step 5. Add a teaspoon of pure vanilla extract and a small pinch of baking soda. Mix all the wet ingredients well. Now add wet ingredients to dry ingredients and gently stir into brownie batter. Now heat the milk in microwave for 2 minutes.
Step 6. Add the dark chocolate to the hot milk and let it melt. With in 2 minutes chocolate will melt. Stir it and add the brownie batter.
Step 7. Gently fold the mixture again and pour into prepared baking pan. Bake for 18-22 minutes or until just cooked through and the top has set. Let it cool in room temperature. Once cool, cut into medium 12 bars.
For frosting – Melt the chocolate in a microwave with 2 teaspoons of milk. Once melt, pour on the brownies.
Enjoy it with a glass of milk or Ice-cream !!

Addition of protein powder is not mandatory. You can replace it with coconut flour.
Natural unsweetened cocoa powder is used in this recipe. It is best to use Hershey's unsweetened cocoa powder as it give intense flavour to the brownies.
If brown sugar is not available you may use white sugar or to make it more healthy use honey or maple syrup. It's depends on your preference.
This recipe can be doubled.
