Yogurt Lassi
Lassi is a chilled sweet yogurt drink. It tastes awesome when flavoured with cardamom and topped with chopped nuts. It is a traditional drink of Punjab (North India) but it is popular world wide. There are many variation of lassi recipe available. Sometimes sugar is replaced with salt and this variation is known as salted lassi or chaas.
Another variation is Makhaniya lassi which is popular in Rajasthan and Gujrat states of India. In this version, it is topped with dollop of fresh butter. Fruits can also be used in this recipe to give a nice smoothy texture and flavour. Some popular fruit lassi are mango lassi, strawberry lassi, kiwi lassi and many more.
It is rich in nutrients and there are many health benefits if you include this delicious drink in your diet. It can help to bring sound sleep revitalizing all the body systems. .
It is rich in calcium which is good for bones and teeth. Due to high moisture content it helps to fulfil the water requirement of the body, especially during the summer seasons. Ingredients
Thick yogurt – 2 cups(greek yogurt is recommended)
Chilled milk – ¼ cup
Sugar – 3 tablespoons
Cardamom powder – a pinch
Pistachios – 2 tablespoons (chopped)
Glazed cherries (chopped) for garnish(optional)
Steps to prepare lassi recipe
Put yogurt in a large mixing bowl.
Add chilled milk and sugar. Using a wired whisk churn it thoroughly for at least 5 minutes till the sugar dissolves.
Add the cardamom powder and add the half of the chopped pistachios. Churn it again to create frothy layer. You will see that foam has formed on the top of lassi.
Now pour drink in glasses . Garnish with left pistachios and chopped cherries.
Serve it chilled. Enjoy !!

The amount of water/milk can be adjusted based on the consistency desired.
Curd and milk or water should be absolutely chilled.
You can use a hand blender in place of wired whisk and put all other ingredients. Blend every thing and serve lassi chilled.

I remember my maid in Mumbai making wonderful salt lassi and I think she added something green (cilantro/parsley?) and other spices.
